Butterscotch Slice Recipe

Recently I found an old recipe book that I had written in recipes from when I first started baking as a teenager.  I went through looking over the recipes I had got from the different people in my life.  Most of them had stuck with me over the years but a couple I had forgotten about and thought I better bring back into my current recipe collections. This Butterscotch Slice was one of them.  It is so simple to make and a nice change from my normal combinations.  I hope you enjoy.


150 grams butter
1 cup brown sugar
1 tsp vanilla essence
1 cup sultanas
1 egg, lightly beaten
1 1/2 cups flour
1 1/2 tsp baking powder

Preheat oven to 180 C and line square baking tin
Melt the butter on low heat
Remove from heat and add sugar, vanilla and dried fruit
Mix in the egg then the flour and baking powder, mix well
Spread into lined tin
Bake for 15 – 20 minutes until
Remove from oven and turn out on cooling rack

When cool ice with Butterscotch Icing

50 grams butter softened
1 1/2 cups icing sugar
2 tbsp brown sugar
2 tbsp water

Beat all ingredients together until light and fluffy
