Easter Cupcakes

This Easter I thought I would share with you a very simple but delicious recipe of Easter Cupcakes.  When I made these my husband told me they were the best cupcakes I have ever made, which is quite a compliment as he doesn’t really like cupcakes.  Needless to say they were a bit with the family and disappeared very quickly with a few tears when my oldest found out that we had shared some with guests and so they were finished.



125 grams butter at room temperature
1 cup of sugar
1 tsp of vanilla essence
2 eggs
1 1/4 cups of flour
2 tsps of baking powder
1/2 a cup of milk

Preheat oven to 180 C and line or grease muffin tins
Cream butter, sugar and vanilla together
Add eggs and beat until light and fluffy
Add flour, baking powder and milk
Beat until mixture is well combined and lightens in colour
Spoon into muffin tin
Bake for 25 – 30 minutes until golden and bounces back when touched
Leave to cool in tin for 10 minutes before turning out to cool


100 grams of butter softened
1 1/2 cups of icing sugar
2 tips cocoa
1 -2 tbsp of milk

Cream butter and icing sugar together
Add the cocoa and beat
If you need the mixture to be more spreadable add milk and beat
Pipe onto cooled cupcakes
Decorate with mini easter eggs and flowers
