Coconut Snowball Cupcakes

My children love baking, so over the summer holidays I decided that we would do some each week, from my stockpile of untried recipes.  The result being that I now have a selection of those I want to share with you starting with these Coconut Snowball Cupcakes.


2 1/2 cups flour
3/4 tsp baking soda
1/2 tsp salt
150 g  butter
1 1/2 cups sugar
3 eggs
2 tsp vanilla
3/4 cup sour cream
1 cup coconut

Preheat oven and lin muffin tin
Combine flour, baking soda and salt
In a large bowl beat butter and sugar together
Add eggs one at a time beating
Add vanilla
Add dry ingredients and sour cream mixing
Fold in coconut
Drop into liners to halfway full
Bake 18 minutes and allow to cool



50 g butter
3 tbsp on sour cream
2 cups icing sugar
1 tsp vanilla
Coconut for garnish
Cream butter and sour cream until smooth
Add icing sugar and vanilla beat until blended
Spread over cooled cupcakes
Sprinkle with coconut
