Carrot Cake – Recipe

The idea of carrots in a cake is quite novel in some places.  I remember when I made my first one after I moved to Egypt.  The look of peoples faces was classic when I told them what type of cake it was, but upon tasting it was often asked for the recipe.  Personally I am not into finding crunchy additions to my cake so I don’t make it with walnuts.  This recipe is simple and makes two medium cakes.


3 eggs
2 cups brown sugar
1 cup sunflower oil
2 cups peeled and grated carrot
2 1/4 cups flour
1/2 cup milk warmed
1 tsp salt
2 tsp cinnamon
2 tsp baking soda

Preheat oven to 160 C and grease 2 medium cake tins
Lightly beat together eggs and brown sugar
Add the oil and mix
Add all remaining ingredients and mix until combined
Pour into baking tin
Bake for 5o minutes to 1 hour
Remove from oven and leave to sit for 15 minutes
Turn out on to cake rack to cool before icing
