Gingerbread Loaf – Recipe

This loaf is a wonderful treat as a winter warmer or Christmas baking addition for the extra guests that come by during the holiday season.  I enjoyed sitting down with this and a hot chocolate on a cool winters day, snuggled on the couch catching a few rays of sunshine.
1 tsp baking soda
225 ml milk
425g flour 3 1/3  cups
1 tsp baking powder
2 tsp ground ginger
2 tsp mixed spice
pinch salt
115 g butter
1 cup sugar
1 cup golden syrup
Preheat oven to 180C and grease and line loaf tin
Dissolve baking soda in warm milk
Sift flour, spices and salt into a bowl
Put butter golden syrup and sugar in pan and heat gently not boiling
Add mixed milk and baking soda into the butter mixture and stir
Pour into dry ingredients and mix until smooth
Pour into baking tin
Bake for 1 hour, rotating half way
