Stained Glass Cookies

Last year I saw a picture of stained glass cookies and thought I have to try that.  I used a basic sugar cookie recipe from the Chelsea Sugar Website then did a bit of experimentation to see what method gave the best result.  The great thing about this recipe is that you can do other things like fill the cookies with jam like I have in the banner photo of dip them in coloured sugar as you see below.

Ingredients
2 cups flour
1 tsp baking powder
125 g butter in small cubes
1/2 cup of sugar
1 tsp vanilla essence
1 egg lightly beaten
coloured lollipops

Method
Preheat oven to 180 c and line cookie sheet with baking paper
Put flour and baking powder in the food processor
Add the cubed butter and process until it resembles fine breadcrumbs
Add the sugar, vanilla and egg and pulse to combine
Turn out onto floured surface and mix to form a stiff dough
Add a table spoon of milk if the dough will not come together
Roll out the dough to about 5mm thickness
Cut into shapes then place on baking paper
Cut out centre shape and remove dough,
Bake along side larger cookies if desired
Bake for 12 – 15 minutes then remove from oven
Crush same coloured lollipops in a plastic bag with rolling pin.
Fill empty centres with the crushed lollipops then bake a further 5 minutes
Remove from oven and allow to cool

Alternatively:
Before baking dip cookies in coloured sugar then bake for 20 minutes
Even amount of shapes removing centres from only half of them and fill with jam once cooled
