Growing up my Mum always made a variety of Christmas sweets and one of my favourites was Lolly Cake. It has now become one of our family treats at Christmas and one of the things I make to put in a treat box as gifts. It’s a super easy recipe that the kids can help with and I hope you will enjoy it with your family as much as I do with mine.
115 gr butter
1/2 tin condensed milk
1 pkt malt biscuits crushed
1 pkt fruit puffs or mini marshmallows
coconut for rolling
Crush malt biscuits or make into crumbs in food processor
Warm butter & condensed milk then mix with crushed malt biscuits
Chop up fruit puffs then add to the mixture
Make into roll or flatten into a pan
Roll in coconut and put it in the fridge to set.
When set cut into treat sized portions
Keep refrigerated until ready to serve
