Almond Chocolate Fudge

I found this recipe last year when I was looking for some thing quick and easy to make to give as gifts for Christmas.  For years now I have made sweets to give to friends and neighbours, but most of them were very time consuming and I was getting to the point where I almost decided to give it up, until I discovered a number of recipes that made it so much easier.  This is one of them. One of the things I love about this recipe is that you can change the flavour by adjusting what fruit and nuts to add to it.


250 g dark chocolate
1 tin sweetened condensed milk
60 g butter
1 cup dried fruit & nuts chopped ( I used almond & cranberry)
1  cup coconut
Extra coconut for sprinkling on top

Line square tin with baking paper
Melt the chocolate in the microwave – heat 30 seconds at a time stirring each time until almost melted.  Stir until smooth
Heat the butter and condensed milk gently until the butter has melted
Remove from heat and pour into chocolate with the fruit & nuts
Fold in 1 cup of coconut
Pour into prepared tin
Sprinkle coconut over top
Set in fridge until firm then slice

peanuts & raisins
