Melting Moments – Recipe

I haven’t had melting moments since I was a child.  When I was looking for something different to make for the kids I was reminded of them when looking through the old Kerikeri Cookery Book that I am trying recipes from at the moment.  After making the biscuits for this recipe I decided to liven them up a little with a variety of fillings.  I made a batch of butter cream icing and split it in half and added some passionfruit pulp to one half and raspberries to the other half to given them a beautiful fruity taste.

Ingredients
200 g butter
3/4 cup icing sugar
1 cup flour
1 cup cornflour
1/2 tsp baking powder
vanilla essence

Method
Cream butter and icing sugar together until light and fluffy
Stir flour cornflour and baking powder together
Mix into creamed mixture mixing well
Roll dough into small balls size of large marbles and place on greased oven tray
Flatten slightly with floured fork
Bake 180 for 20 minutes
Cool and sandwich two biscuits together with butter icing

Butter Cream Icing
60 grams butter softened
1/4 tsp vanilla
3/4 cup icing sugar
2 tbsp of passionfruit pulp
6 frozen raspberries defrosted
Method
Beat the butter vanilla & icing sugar together until creamy
Separate the icing in half into two bowls
Add the passionfruit pulp to one bowl and the raspberry to the other bowl
Hand beat the icing and fruits together
If the icing becomes to wet mix in a little icing sugar
When biscuits are cool sandwich a spoonful between two biscuits
