Passionfruit Slice

The last time my Mum came to visit she brought me a whole lot of passionfruit from her garden.  I froze the pulp and started searching out recipes that I could make with it.  One of the ones that I came across was a Passionfruit Slice and I have been meaning to make it for ages.  I adjusted this recipe slightly after looking through a number of recipes online but have to credit Anna at Morsels and Musing for inspiring me


1 cup flour
1 1/2 tsp baking powder
1 cup coconut
1/2 cup sugar
125 g butter melted

1 tin condensed milk
juice of 2 lemons (about 1/4 cup)
3 tbsp of passionfruit pulp

Preheat the oven to 180 C and line a square baking tin
Combine dry ingredients
Mix in melted butter
Press into baking tin
Bake for 15 minutes until golden
Set aside to cool
Reduce heat to 150 C

Whisk together the condensed milk, lemon juice and passionfruit pulp
Pour over cooled base
Bake for another 15 minutes until just firm to touch
Allow to cool completely before serving
