Ghorayeba (Egyptian Butter Cookies) Recipe

I thought I would share something a little different with you for this Easter. This is a traditional recipe that many Coptic Christian families would make at either Easter of Christmas and give as gifts when they visit each other.  This is my first year making it and already the kids are trying to snatch them in passing before I get a chance share it with our guests.


225 g butter
1/2 cup icing sugar
1 egg white
vanilla essence
2 1/4 cups flour
pistachio nuts to decorate

Preheat the oven to 180 C and line and cookie sheet with baking paper
Melt the butter and mix in the icing sugar
Beat in the egg white and vanilla essence
Sift in the flour slowly mixing as you add it
Knead until the flour is fully incorporated
Take about a tablespoon of the dough at a time and roll into balls
Place on baking tray and press a pistachio into the top
Bake for 12 – 15 minutes until just getting colour
