Lemon Cake with Cream Cheese Frosting

These days I find myself falling back on the easy and trusted recipes so that I can whip something up in the midst of all the other things going on.  This Lemon Cake is simple and delicious and a great option to make when you have a few extra guests to share it with.


75 grams melted butter
1 cup sugar
lemon juice (of 1 lemon)
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
grated lemon zest of one lemon

Preheat oven to 180 C and grease and line 2 cake small cake tins
Beat the butter, sugar, lemon juice and eggs in a bowl then stir in lemon zest
Separately combine the flour, baking powder and salt and make a well in the centre
Stir into egg mixture alternately with milk, beating well after each addition.
Spoon the mixture into 2 small cake tins
Bake for 40 – 50 minutes until skewer comes out clean
Allow to cool slightly before turning out of the pan
Once the cakes have cooled completely ice the cake

Cream Cheese Frosting

150 grams cream cheese
50 grams butter softened
2 cups icing sugar
zest & juice of 1 small lemon

Beat the cream cheese and butter together until smooth
Beat in 1 cup of icing sugar
Add the zest and juice of the lemon and mix
Add the rest of the icing sugar and beat until smooth
