Filo Baked Brie – Recipe

Today for a change I decided to share a recipe that is savoury rather than sweet.  I have often used this recipe at dinner parties when I know we are going to need a little snack to tide us over till the meal is ready, and serve it with crackers, grapes, nuts and dried fruits.  The other great thing about it is you can choose what flavour combination you want with the brie to give some variety or to match it with your meal.

Ingredients
1 brie or camembert cheese
filo pastry
2 tbsp of melted butter
jam or chutney for filling

Method
Preheat the oven to 180 C and grease a small baking dish
Take approximately 8 sheets of filo pastry
Trim the pastry down to a size suitable to wrap the brie
Place two slices on bench and brush with butter
Place the round of brie in the middle of the pastry
Add a spoon of desired jam or chutney on the cheese
In the above photo I used apricot jam
Wrap the pastry carefully around the cheese and filling
Lay out more 2 more sheets pastry and brush with butter
Place the cheese join side down in the centre of pastry and wrap
Repeat the pastry and wrap process two more times
Place the brie and pastry join side down in baking dish
Make a small pastry decoration for top if desired and butter
Bake for 20 – 30 minutes until golden
Remove from oven and allow to cool for around 1/2 and hour before serving

plum jam or chutney
tomato relish
fig and walnut
raspberry and almond
sun-dried tomatoes
mushroom and chives
cranberry sauce
