Chocolate Anzac Slice Recipe

Anzac Biscuits are a tradition in New Zealand and Australia and a part of our history.  I have tried feeding them to my kids as I think they are a great option for school lunches but they haven’t taken to them.  Add a little cocoa powder it’s like magic, the kids are happy and I feel like I am giving them something a little healthier.

1 cup flour
2 tsp baking powder
3/4 cup rolled oats
1/2 cup coconut
2 tbsp cocoa
1/2 cup sugar
125 grams butter
2 tbsp golden syrup
2 tbsp hot water
1/2 tsp baking soda

Preheat oven to 175 C and line square baking tin with baking paper
Put all dry ingredients in a bowl and mix together
Melt the butter and golden syrup together
Mix hot water and baking soda together and add to butter mixture
Stir together as it foams up
Add to the dry ingredients to combine
Tip the mixture into tin and press down
Bake for 15 minutes (or slightly longer if you prefer a bit more crunch)
Allow to cool slightly in tin before putting on rack
Slice when cold
