Orange and Chocolate Hot Cross Buns

In New Zealand on Good Friday we traditionally have Hot Cross Buns, which are usually spice buns with dried fruit in them.  Having young kids who tend to be fussy I have had to find something else to make them.  Over the last couple of years Chocolate Chip Hot Cross Buns have been available in supermarkets, but I decided to go a step further and make orange and chocolate flavoured buns with chocolate chips in them.


4 tsp of bread makers yeast (2 tsp of normal yeast)
1 1/2 cups of milk warmed
1 tbsp of sugar
4 cups flour
1/2 cup cocoa powder
3 tbsp sugar
75 grams cold butter chopped up
1 egg lightly beaten
1/2 cup chocolate chips
zest of 1 orange

1/4 cup flour
2 tsp sugar
3 tbsp water

1 tsp gelatine
1 tbsp boiling water


Place yeast, milk and 1 tbsp sugar in a bowl and stir to dissolve yeast
Set aside in a warm place for 10 minutes until foamy
Sift flour and cocoa into a large bowl and rub in the butter until like crumbly
Make a well in the centre and add egg, 3 tbsp of sugar and yeast mixture
Stir to combine then turn out on floured surface and knead until combined
Put the dough in lightly oiled bowl, cover and place in warm place to rise 1 hour

Grease a square baking dish
Punch down the dough turn out onto floured surface and knead for 5 minutes
Add in the chocolate chips and orange zest and knead to combine
Divide into 16 parts and roll into balls and place into prepared dish
Cover and put in warm place to rise a further 30 minutes
Preheat oven to 180 C

Combine paste ingredients in a bowl and spoon into a ziplock bag for piping
When buns have risen snip corner of bag and pipe crosses on the buns
Bake for 30 minutes until golden

Once buns are cooked remove from oven
Combine glaze ingredients and stir till gelatine is dissolved
Turn buns out to cool on wire rack
Brush tops with the glaze
