Golden Syrup Dumplings Recipe

Of late I have been going through my Mums recipe book where she has jotted down her favourite recipes that she has gathered over the years.  This one is another one we enjoyed on cold winter nights and thought it would be a great one to share and the weather down under moves into the winter months.  This is one of those desserts that are a great comfort food on cold nights served with cream or ice cream.

Ingredients
Dumplings
1 1/4 cup self raising flour
pinch salt
25 grams butter
1/3 cup golden syrup
1/3 cup milk

Sauce
25 grams butter
1/2 cup golden syrup
1 1/2 cup water
3/4 cup brown sugar
Method
Dumplings
Sift flour and salt together and rub in butter
Combine golden syrup and milk in jug
Beat with a fork
Make well in the dry ingredients
Gradually stir in milk mixture
Stir with wooden spoon until thourghly mixed – don’t beat
It is a fairly wet dough
Sauce
Combine all ingredients in medium sized pot
Stir over medium heat until sugar dissolves
Increase heat until simmering evenly
Gently lower a tbsp of dough into the sauce and repeat with all dough
Cover and simmer for 25 minutes
Serve hot with cream or ice cream
