Peanut Brownies – Recipe

This week it is another Kiwi Classic for you from the Edmonds Cookbook. Peanut Brownies are not an american brownie, but a chocolate biscuit with peanuts in it.  Before making these for this post I hadn’t eaten them since childhood, reminding me of coming home to the smell of fresh baked cookies for afternoon tea.


125 grams butter
1 cup sugar
1 egg
1 1/2 cups flour
1 tsp baking powder
1 pinch of salt
2 tbsp cocoa
1 cup peanuts

Preheat oven to 180 C and line a baking sheet
Cream the butter and sugar until pale
Add egg and beat well
Sift in dry ingredients and mix until combined
Add peanuts and mix well
Roll into balls and place on tray, flatten gently
Bake for 15 minutes
Remove from oven and allow to cool slightly
Continue cooling on rack
