Boysenberry Flummery – Recipe

This recipe is one that I got from my Mum, we would enjoy it on special occasions during the summer months especially around Christmas.  It is a light and delicious dessert to share.


1 packet of boysenberry jelly
1 cup hot water
1 tin of boysenberries
4 tbsp sugar
300 ml cream

Dissolve the jelly crystals in hot water
Add 1 cup of boysenberry juice from the tin
Leave the jelly to firm up but not to be completely set
Whip the cream and drain the boysenberries
When the jelly is barely set add the sugar and beat well
Fold in the fruit and cream to the jelly
Spoon into serving glasses or bowl
Leave to set in fridge and serve chilled
