After a good break over the holiday season I am now getting things back together to share with more recipes with you. The first recipe for the year is this delicious and light Blueberry Crumble Cake.
75 grams cold butter
1/2 cup flour
1/4 cup brown sugar
125g butter softened
2/3 cup sugar
1 tsp lemon zest
1 1/3 cups flour
1 1/2 tsp baking powder
1/2 cup sour cream
1 1/2 cups blueberries
Preheat the oven to 180 C
To make topping combine butter flour and sugar together in food processor until crumb like and set aside.
In separate bowl cream butter and sugar till light and fluffy
Add eggs one at a time beating well after each addition
Add the lemon zest and mix
Add flour and baking powder to cream mix alternatively with sour cream
Spoon the mixture into pan scatter with blueberries the sprinkle over topping
Bake for 50 -55 minutes
