Russian Fudge – Recipe

With Christmas almost upon us it is time to break out all my Mum’s Christmas recipes again and get my sweet boxes together.  Last year I shared with you Rum & Raisin Truffles, this year I decided on Russian Fudge.  I like this recipe because it is creamier than the chocolate fudge and has a lovely caramel flavour.

Russian Fudge

3 cups sugar
1/2 cup milk
1/2 cup condensed milk
125 grams butter
pinch of salt
1 tbsp of golden syrup

Heat sugar and milk and stir constantly until dissolved
Add condensed milk, butter, salt and golden syrup
Stir until the butter melts
Continue boiling and stir occasionally until soft ball stage
Remove from heat and leave to cool
Once cooled beat with a wooden spoon until stiff
Pour into tin and mark out into squares
Allow to set then cut into squares
Keep in the fridge
