Christmas Spice Cookies – Recipes

Until having kids I never really made Christmas cookies, it wasn’t something I did as a kid or really thought about.  Last year I decided that baking cookies with the kids and decorating was a great way for them to do gifts for friends and family. Last year we made Chocolate Sugar Cookies and they really enjoyed it and now we are expanding the varieties we make including this Spice Cookie, which is similar to gingerbread but soft.


250 grams butter
1 cup sugar
1/4 cup golden syrup
1 tbsp honey
1/2 tsp cinnamon
1/2 tsp ginger
1 tsp baking soda
1 tbsp water
3 – 3 1/2 cups flour

Melt butter, sugar, golden syrup, honey, cinnamon and ginger in a pot on a medium heat.  Stir gently
Bring to a boil then remove from heat
Dissolve the baking soda in the water
Stir into warm butter mixture
Leave the mixture for to cool for 5 minutes
Sift 3 cups of flour into a large bowl
Pour in the wet ingredients and mix with wooden spoon
Mix into a stiff dough, add flour if too wet
Turn out onto a floured board and knead lightly
Divide the mixture in half and wrap in plastic wrap
Refrigerate until firm but not set, about 2 hours
Preheat the oven to 180 C and line baking trays
Roll out on a floured surface to about 3mm thick
Cut into shapes and place on baking trays
Bake for 12 – 15 minutes until golden brown
Transfer to rack to cool.
Decorate with fondant icing or royal icing
