Orange and Peach Cake – Recipe

I stumbled across this recipe a while back and have been waiting for an occasion to make it.  With the arrival of some new guests and all ingredients on hand I decided it was time to give it a try.  It was absolutely delicious and great for a treat to share with friends.

Orange & Peach Cake Recipe

1 tin of peach slices drained & chopped
200 g butter softened
1 cup of brown sugar
3 eggs
3/4 cup sour cream
zest from 1/2 an orange
1/2 cup fresh orange juice
1 1/2 cups flour
2 1/2 tsp baking powder

Preheat oven to 180 C and grease round baking tin
Cream butter & brown sugar until creamy
Beat in eggs one at a time
Add the remaining ingredients and stir to combine
Be careful not to over mix
Pour into baking tin and bake for around 45 minutes
Leave to stand for 5 minutes before turning out to cool

This cake is tasty without adding icing, but delicious addition is the butter cream icing below.

Orange Butter Cream Icing
50 g butter softened
1 1/4 cup icing sugar
zest & juice from 1/2 an orange

Beat all ingredients together until smooth and creamy
