In New Zealand when you have to take a plate to a pot luck for morning tea or lunch it is common to find a plate of piklets with jam and cream on the table. Piklets are a Kiwi version of pancakes or hot cakes on a smaller scale. They are super easy to make and a popular choice for finger food. I hope you enjoy a different take on a common food.
1 cup flour
1 tsp baking powder
1/3 cup sugar
pinch of salt
3/4 cup milk
butter to cook
Add dry ingredients to a bowl
Add egg and milk and whisk until smooth
Pre heat butter in pan on medium to low heat
It is important to get the pan at the right temperature so piklets don’t burn before cooked.
Pour small circles of the batter into the pan
Cook on onside until bubbles form on the surface
Turn and cook on other side until browned
Remove from pan and serve cool with jam and cream
