IQS Chocolate Raspberry Cake Recipe

OK so I have to tell you this recipe is amazing.  It is the first sugar free (or almost sugar free), flour free recipe that I have tried that I really enjoyed and felt like I got that sweet fix I was looking for.  Be warned this is dangerously good.

Flourless Berry Chocolate Cake

100 grams of dark chocolate (85%) chopped into even sized pieces
1/2 cup of coconut oil
1/4 cup of raw cacao powder (I used normal cocoa powder)
3 eggs whisked
pinch of salt
1/2 cup rice malt syrup
1 cup frozen raspberries

Preheat oven to 200 C and grease a 20 cm spring form tin
Melt coconut oil then pour over the chocolate chunks
Stir until smooth gently heating if needed
Add cacao, salt, rice malt syrup and eggs
Whisk until smooth batter forms
Gently stir through half the raspberries
Pour the batter into greased pan and level out
Top with the remaining raspberries
Bake for 25 – 30 minutes until the centre is just firm
Set aside to cool before removing from pan
