Albert Square – Recipe

Albert Square is another kiwi classic that we had when we were growing up, but you don’t see very often now.  The citrus and fruit in the base make a nice refreshing combination for an afternoon tea with friends.

Albert Square


125 grams butter, softened
¾ cup sugar
1 tablespoon golden syrup
grated rind of 1 lemon
2 eggs
2 cups flour
2 teaspoons baking powder
1 cup currants
2 tablespoons milk

Preheat oven to 160C and grease a square baking tin
Beat butter, sugar, golden syrup and lemon rind until light and creamy
Add eggs one at a time and beat
Add the remaining ingredients and stir into the creamed mixture
Spread into the baking tin
Bake for 35 minutes until golden
When cool ice with butter icing, sprinkle with coconut and cut into squares
