Caramel Apple Pudding – Recipe

During the cold winter months I was looking round for something hot to serve for dessert and came across the Caramel Apple Pudding recipe.  I adjusted it a little to suit my liking and found it an instant hit with family and guests.

Caramel Apple Pudding

3 – 4 apples peeled, cored and slice evenly
1 2/3 cups flour
2 tsp baking powder
1 cup sugar
3/4 cup milk
150 grams melted butter
2 eggs, beaten
1 cup brown sugar
1/4 cup golden syrup
1 1/4 cups water

Preheat the oven to 180C and butter baking dish
Layer apples in the bottom of the dish
Put flour, baking powder, sugar, milk, butter and egg in a bowl
Beat until pale then spread over the apples
Mix brown sugar, golden syrup and water in a saucepan
Stir over medium heat until dissolved then bring to boil with out stirring
Pour over the pudding and apples
Bake for 30 – 35 minutes until golden
