Raspberry White Chocolate Tarte

During the 5 years that I lived in Switzerland my friends introduced me to many of the wonderful dishes of Europe.  One of my favourite dessert ones was a simple Raspberry Tart.  A delicious treat for a special occasion and extra enjoyable with some white chocolate.
(Being a busy Mum I make this with bought pastry to save time.)

Raspberry & White Chocolate Tart

Ingredients
1 sheet of short pastry
1 cup raspberries (or your choice of berries)
1/2 cup white chocolate bits
2 eggs
1/4 cup sugar
1 cup cream

Method
Take out 1 sheet of pastry to defrost
Preheat oven to 200C and grease pie dish
When pastry is defrosted put into pie dish evenly
Use a fork to pierce the base of the pastry
Bake blind for 10 minutes and remove from oven
Turn oven down to 160 C
Allow pastry to cool
Spread raspberries evenly over the pastry
Sprinkle with the white chocolate
Whisk the eggs sugar and cream together
Pour over the pastry and fruit
Bake for 30 – 40 minutes or until set
Remove from oven
Serve hot or cold as desired
