Afghan Biscuits – Recipe

Afghan Biscuits are another “Kiwi Classic” that I wanted to share with you. These biscuits melt in your mouth but have an added crunch from the cornflakes.  Hope you enjoy another treat from my homeland.

200g butter, softened
1/2 cup caster sugar
1 1/4 cups flour
2 tbsp cocoa powder
1 cup cornflakes

Preheat the oven to 180 C and line cookie sheet with baking paper
Cream the butter and sugar
Add the flour and cocoa and mix well
Fold in the cornflakes with out crushing too much
Place spoonfuls onto the baking tray
Bake for 15 minutes
Allow to cool then ice with chocolate icing and decorate with almonds
