I love this scone recipe it is so easy. One of the things that puts me off making scones is having to rub the butter. In this one you just mix the lemonade and cream in to it with a knife. I have made it with several different ingredients added and it has worked like a charm every time.
2 cups flour
4 tsp baking powder
1/2 cup cream
1/2 cup lemonade (sprite or 7Up)
additional cream or milk for brushing
Preheat oven to 200 C and line baking tray with baking paper
Put dry ingredients in bowl and mix to combine
Make a well in the centre and pour in cream and lemonade
Mix swiftly together
Turn out on floured board and knead a few times
Roll out and cut into desired shape
Put on baking tray and brush with cream
Bake for 12 – 15 minutes until golden
If you would like to make different flavoured scones add 1/2 cup of desired filling before you add the cream and lemonade. The combinations I have tried are date, sultana and chocolate chip.
