Raspberry & White Choc Muffins – Recipe

I am always exploring for new snacks to send to school with the kids and this one was a hit.  I was surprised even my fussy boy took to them and asked for more.  As always the combination of raspberries and white chocolate is delicious.

Ingredients
2 1/2 cups of flour
4 tsps baking powder
1 cup sugar
100 grams melted butter
1 cup milk
1 egg
1 cup of frozen raspberries
3/4 cup white chocolate bits

Method
Preheat oven to 180 C Line muffin tins with muffin cups
Put flour, sugar and baking powder in a bowl
Add melted butter, milk and egg and mix till just combined
Fold in raspberries and white chocolate
Spoon into muffin cups
Bake for 30 minutes or until golden and skewer comes out clean
Allow to cool slightly before turning out on to cooling rack.
