Blueberry Baked Custard – Recipe

This week after having a house full of guests and extra cream to use up I decided to make a fruity baked custard to use it up.  I have never made a baked custard before and after looking around at a whole lot of different recipes I decided to try my own combination to make a healthier variety with a bit of fruit in it to liven it up.  And so we have the Blueberry Baked Custard.

1/2 cup cream
1/2 cup milk
2 tbsp pure maple syrup
1/2 tsp cinnamon
1/2 tsp vanilla essence
2 eggs
1 cup blueberries

Preheat the oven to 150 C
Combine the cream, milk, maple syrup, cinnamon and vanilla essence in a saucepan
Heat gently to combine the ingredients with out boiling
Leave to cool for about 15 minutes until lukewarm
Spread blueberries over the bottom of 4 ramekins
Whisk the eggs in a small bowl
Gently add to the cooled mixture while stirring
Pour into the ramekins
Place ramekins in a oven proof dish
Pour hot water into the dish until it comes half way up side of ramekins
Bake 30 minutes until golden and wobbly
Remove from oven and remove from water to cool
