Anzac Biscuits – Recipe

Anzac Biscuits are an oatmeal cookie that is associated with the Australian New Zealand Army Corps (ANZAC).  Although there a re rumours that these biscuits were created to send to troops at war, the New Zealand National Army Museums research suggests that they were made for fundraisers for war efforts instead.  Whatever the truth is these are a tasty nutritious  treat for all.

1 cup Flour
1 cup Sugar
1 cup Rolled Oats
1 cup Coconut
125 grams Butter
2 Tbsp Boiling Water
1 Tbsp Golden Syrup
1 tsp Baking Soda

Preheat the oven to 180 C and line tray with baking paper
Combine all dry ingredients in a large bowl
Melt butter and golden syrup together – don’t boil them
Combine the boiling water and baking soda in a cup then add to the butter and golden syrup
Add to the dry ingredients and mix thoroughly
Spoon teaspoons on the mixture onto baking tray leaving room for them to spread.
Bake 12 minutes until golden brown
Allow to cool on tray for a few minutes before putting on cooling rack
