Fruity Carrot Muffins – Recipe

In my search for healthier baking ideas I made up these carrot muffins full of fruit and a sugar free cream cheese icing.  I hope you enjoy trying them.

2 cups flour
4 tsp baking powder
2 tsp cinnamon
1 egg
1/4 cup coconut oil (melted)
3/4 cup of milk
3 small carrots grated
1 apple grated
1/2 cup pineapple pieces
1/2 cup sultanas
1/2 cup malt syrup

Preheat oven to 180 C and line muffin tin with muffin cups
Stir all ingredients until just combined
Spoon into muffin cups
Bake for 20 minutes until skewer comes out clean

Lemon Honey Cream Cheese Icing

1/4 cup butter
1/4 cup of cream cheese
1 tsp honey
1 tsp of lemon

Cream all ingredients together
Spread on muffins when cool
