Funfetti Cookies – Recipe

Recently I was looking for a recipe for soft cookies recipe.  I had never heard of funfetti cookies although at the supermarket we can buy plain cookies iced with sprinkles on them.  Anyway these were one of the first things that came up when I searched and so I decided to try them out for the kids.  This recipe is adapted from a  chocolate chip cookie recipe that my kids love because it is soft and chewy.  It works perfectly with the sprinkles instead of the chocolate and is a delicious treat for a special day.

Ingredients
125 grams butter softened
1/2 cup brown sugar
1/2 cup of white sugar
1 egg
1 tsp vanilla essence
1 3/4 cups flour
3 tsp baking powder
1/2 cup sprinkles or funfetti

Method
Preheat oven to 180C and line cookie tray with baking paper
Cream butter and sugars together
Add egg and vanilla and beat
Add the flour and baking powder and mix
Stir in the sprinkles
Bake 12-15 minutes.  Allow to cool slightly before putting on cooling rack
