A while back I had a hankering for something with that apple and custard taste so had a bit of a search on line for some ideas and came back with the French Apple Cake. After making a few adjustments I created one that was quick and easy with the added freshness of blueberries. The result. A delicious custardy apple and blueberry dessert for one of those special occasions.
1 tin of diced apple
1 cup of blueberries
Preheat oven to 180C and grease a medium pan.
Mix the ingredients of the two bowls together.
Pour into the prepared cake pan.
Add the 2 tbsp of flour to the cup of batter and mix.
Sprinkle with demerara sugar evenly over the top.
Allow to cool thoroughly until removing the from the cake tin.
