French Apple Cake with Blueberries – Recipe

A while back I had a hankering for something with that apple and custard taste so had a bit of a search on line for some ideas and came back with the French Apple Cake. After making a few adjustments I created one that was quick and easy with the added freshness of blueberries.  The result.  A delicious custardy apple and blueberry dessert for one of those special occasions.

1 tin of diced apple
1 cup of blueberries
1 cup of flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 egg 
2 egg yolks
100 grams melted butter
1 cup milk
1 tsp vanilla extract
2 tbsps flour
1 tbsp demerara sugar
Preheat oven to 180C and grease a medium pan.
In a large bowl combine the cup of flour, sugar, baking powder and salt.
In another bowl whisk the egg, yolks, butter milk and vanilla together.
Mix the ingredients of the two bowls together.
Set aside one cup of the batter.
Add the apple slices and blueberries to the remaining batter and fold in.
Pour into the prepared cake pan.
Add the 2 tbsp of flour to the cup of batter and mix.
Spoon it evenly over the mixture already in the pan.
Sprinkle with demerara sugar evenly over the top.
Bake for 1 hour until it is golden brown
Allow to cool thoroughly until removing the from the cake tin.
