Chocolate Muffins with Caramel Filling

My husband came home the other day with a tin of caramel that had a picture on it with muffins filled with caramel and a recipe on the back.  My first thought was that I would have a job on my hands and put off making them a while.  When I finely picked up the tin and looked at the directions I was pleasantly surprised at how easy it was and how well they turned out.  Needless to say they we devoured before I could get a photo of them so I had to make another batch on the sly to photograph while every one was out one day.

Chocolate Muffins with Caramel Filling


1 3/4 cups flour
1/4 cup cocoa
4 tsp baking powder
3/4 cup sugar
100g unsalted butter (melted)
1 1/4 cups milk
1 egg
3/4 cup caramel


Preheat the oven to 200 C, Place muffin cups in pan
Sift the flour, cocoa and baking powder into a bowl
Stir in the sugar then make a well in the middle
Combine the melted butter milk and beaten egg in a separate bowl
Pour the liquid into the well and stir till just combined
Half fill the muffin pans with muffin mixture
Place a teaspoon of Caramel on top and cover with muffin mixture
Bake for 15 – 20 minutes until cooked
