Banoffee Pie – Recipe

I have heard about, read about and seen Banoffee Pie for a few years now but never got round to trying it or making it.  Then the other day I had some left over caramel and so I finally decided it was time for me to make it.  There are three main stages for making this recipe so you need a little bit of time to prepare even if it is very easy.

Step One:

1 packet of plain biscuits crushed
150 grams butter melted

Mix the biscuits and melted butter together
Press into the a spring form tin and refrigerate.

Step Two

1 tin of ready made caramel
1 tablespoon of hot water
1 teaspoon of gelatine

Dissolve the gelatine in the hot water then mix into the caramel
Spread over the biscuit base and leave to set in the fridge at least 1 hour

Step Three

3-4 bananas
whipped cream

When you are ready to serve the pie slice banana and arrange over the caramel
Then top with whipped cream and sprinkle with chocolate of cinnamon if desired.

Remember the bananas will go bad quickly so you don’t want to prepare it too much in advance for the best taste.
