With Valentines day just around the corner I thought I would share this cookie recipe with you. I first made them at christmas for the kids to take to their friends and they were a great hit, so I thought what better excuse to make them again.
225 grams butter, room temperature
1½ cups sugar
3 cup all purpose flour
a pinch of salt
1 tsp baking powder
3/4 cup baking cocoa
Cream butter and sugar together until smooth
Add eggs one at a time beating into mixture
Sift the dry ingredients together
Slowly add to butter mixture beating together
When well combined wrap the dough in plastic and put in fridge for 1 hour
When hour is up turn oven on to 180 C and line baking trays with baking paper
Roll out portions of the cookie dough to about 1/2 cm thick
Cut cookie shapes with your cookie cutter and place on baking tray
Cook for 10 – 12 minutes until the edges are just hard.
Remove from oven and place on cooling rack
Repeat with rest of the dough until finished.
This made around 100 small cookies when I made them.
Decorate with icing or just enjoy as them are with a ‘cuppa’
