Plum Cake – Recipe

The arrival of summer is bringing the joy of the variety of fresh fruit.  this week with guests coming and an abundance of plums in our fridge I decided to do a plum cake. This cake is a wonderful combination with the tartness of the plum and the sweet sauce providing a fresh enjoyable treat for the summer.
50 grams butter melted
1/2 cup brown sugar
plums halved with stones removed
150 grams butter soft
1 cup sugar
1 tsp vanilla essence
3 eggs
2 cups flour
3 tsp baking powder
Preheat oven to 180C and grease round baking tin
Melt 50 grams of butter and spread evenly in base of baking pan
Sprinkle with brown sugar and place plums skin side down to cover the base
Using electric beater beat the softened butter with sugar and vanilla until pale and creamy
Add eggs one at a time beating well after each addition
Fold in the flour and baking powder
Put mixture over the plums and smooth surface.
Bake for 50 minutes
Leave in tin to cool slightly before turning out onto serving plate
