Basbousa – Recipe

With Coptic Christmas coming up in a couple of days I thought I would share one of the treats that we enjoy when we get together as a family for special occasions.  This is also one of the things that I and my husband have missed most being away from the Middle East.  One of those is Basbousa a semolina based cake with sugar syrup.  After many attempts and experiments this is the recipe that my husband has settled on.

2 cups of semolina
1 cup of plain yoghurt
1/2 cup butter melted
1/2 cup of coconut
1 cup of sugar
1 1/2 tsp baking powder
1/2 tsp baking soda

Grease baking tray with butter
Mix all ingredients together
Pour into baking pan
Bake around 30 minutes until it is golden
Remove from the oven and pour hot syrup of the hot cake


1 1/2 water
1 cup of sugar
1 tablespoon lemon juice

Put all ingredients in a pot, stir while syrup is heating
Then simmer for 5 minutes
