Rum and Raisin Truffles – Recipe

When I was growing up my Mum made an assortment of sweets for Christmas.  They included fudge, truffles, coconut ice, white christmas and turkish delight.  I have carried on that tradition making the ones I liked best and adding a few of my own.  These rum and raisin truffles are delicious and easy to make.  The only down fall is that they take a little time in the rolling out.

 

Ingredients
100 gr butter
200 gr chocolate
2 cup icing sugar
2 tbsp rum essence
2 tsp cocoa
1/2 cup raisins
Coconut

Method
Melt butter & chocolate gently until just melted (don’t boil)
Sift in half the icing sugar then mix together
Add the rum & cocoa and mix
Add remaining icing sugar and mix until smooth
Stir in the raisins
Roll into balls, roll in coconut and refrigerate
This will make about 50 truffles depending on how large you make them

  1. I believe, any festival is incomplete without Truffles.
    I would use vanilla essence instead of rum essence.
    Kids are gonna love this crazy Christmas yummzz 🙂
