This week was my Mums 60th birthday so I decided to surprise her with a 7 course meal to celebrate. For dessert I did individual Blueberry and Lemon Cheesecakes. As I was preparing so many different things I took the easy way out and brought some plain pre made cheesecake filling, then did the rest myself.
1 packet digestive biscuits (crushed
150 grams melted butter
12 cupcake papers in a pan
1 pottle of cheesecake filling
rind and juice of 1 lemon
1 1/2 cup of blueberries
Mix the biscuits and butter together then spoon into the cupcake papers
Press into the papers using the base of a cup.
Mix the cheesecake filling, lemon and blueberries together and spoon over the base
Refrigerate until ready to serve
