Grandmas Fruit Cake – Recipe

Whenever we went to visit my Grandma while I was growing up there was always fresh home baking on hand.  One of the most common things was her fruit cake.  I remember helping her make it and having to cream the butter by hand, squishing it through my fingers.  It is still one of my favourite cakes and was the first one I made for my husband for his birthday after we married. It’s also the cake I whip up when ever we are expecting any elderly guests.

Grandmas Fruit Cake

250 gr butter
1 c sugar
2 1/2 c flour
3 eggs
2 3/4 c sultanas (500 gr)
1 tsp baking powder
1 cup boiling water
1 dsp custard powder

Preheat the oven to 150 C
Make sauce of water & custard powder
Rinse sultanas then pour over custard mix & allow to cool
Beat butter & sugar until creamed
Add egg and beat in
Add fruit mix then dry ingredients. Mix well
Put in lined tin & bake 45 minutes – 1 hour until golden
