I have to confess that I have never had this as an original dessert. The first time I heard about it was on My Kitchen Rules (MKR) Australia, which my 7 year old son is addicted to watching. Anyway a sweet couple made this as a dessert and it caught my interest, so when I started this blog I decided that it would be something I should try out.
In my adjusted version I have done it with what I could find in the pantry, hence the “inspired”
1/2 cup flour
1/3 cup milk
1/2 cup coconut milk
1/4 tsp of Pandan Paste if it is part of your pantry. Otherwise you could add a few drops of green food colouring if you want the green look.
Mix together milk, eggs and coconut milk then beat in the flour.
Heat pan with a little oil or butter. Spoon a portion of the batter into the pan and cook for about 45 seconds on each side then remove from pan.
1/2 cup of coconut cream
1/2 cup of brown sugar
3/4 cup shredded coconut
Place cream and sugar in a small pan, heat and stir until sugar is dissolved.
Add the coconut and continue to simmer until the mixture has thickened
Spread the Coconut mixture on the crepes and roll up.
