A little while back I stumbled upon an icing (frosting) recipe for a Berry Icing that is delicious. On a whim I decided to put it on a chocolate cake which has now developed into my cheats version of a Black Forest Cake.
I will leave you to decided on a nice Chocolate Cake recipe to use. I have done it with a simple one egg Chocolate Cake recipe as well as a microwave one when in a rush.
150 grams of cream cheese
50 grams of butter
2 cups of icing sugar
zest and juice of one small lemon
1 tin of pitted cherries
fresh cherries to decorate if available
Grated chocolate to decorate
Cream the butter and cream cheese together
Gradually add the icing sugar and beat until smooth
Strain the cherries and pat dry before adding
Fold into the icing mixture with the lemon juice and zest
Divide between the layers of the cake
Decorate with fresh cherries and grated chocolate
As a variation you can use any combination of berries. My usual is frozen raspberries, blackberries and blueberries defrosted and patted dry.
