I know this is not technically a dessert or sweet, but those of you who have spent a day on the street in a hot country know that something like this is the perfect “sweet” to quench your thirst and refresh you till your next meal.
It is very simple recipe and you can sweeten it as you wish. I used mango pulp from a tin for this one so it was already quite sweet.
1 cup of mango pulp (or fresh mango if available)
1/2 cup of coconut milk
a couple of ice cubes
decorate with coconut and pistachio nuts
Blend them all together. If you use fresh mango you may need to add water to get the consistency that you want.
If you don’t have coconut cream on hand a nice alternative is yoghurt.
