Coconut Chocolate Brownies – Recipe

The Americans definitely stumbled on to something good with Chocolate Brownies.  It’s funny 20 years ago I had never heard of them – a couple of years later I went to the US for the first time and was introduced to them.  Now you can find them served in coffee shops all over the world with a vast number of recipes out there with all sorts of different ingredients including berries, chocolate chips or coconut.

When I came back to NZ after my trip I found a recipe for Coconut Chocolate Brownies in the good ole Edmonds cookbook that I have been using ever since.  I like it because it is simple, easy and quick to make.


125 g butter
1/4 cup cocoa
1 cup sugar
2 eggs
1 tsp vanilla essence
1/2 cup coconut
1/2 cup flout
1/2 tsp baking powder

Preheat the oven to 180 C
Melt butter add cocoa and sugar
Beat in eggs one at a time
Beat in the rest of the ingredients
Bake for 30 – 35 minutes
