Whenever I think about Thailand I always think of going to the markets and having Sticky Rice with Mango in a Banana Leaf. After coming home I decided to experiment with making my own the quick and easy way in the rice cooker. This is the version I came up with.
1 3/4 cups of short grained rice
1 1/2 cups of mango nectar
1 1/4 cups of hot water
2 tablespoons of brown sugar
2 x 170mls cans of coconut cream
1 tablespoon sugar
mango to serve
Dissolve the sugar in the hot water.
Put rice, water and mango nectar in the rice cooker
Set to cook and stir once during cooking time
When the rice cooker switches to warm add 1 can of coconut cream and fold through the rice. Replace lid and stand for 10 minutes before serving.
When serving warm the second tin of coconut cream and dissolve the sugar in it. Slice and peel the mango and drizzle the sweetened cream over the rice.
